Chia pudding ingredients:
6 tbsp chia seeds
2tbsp hemp hearts
2 tsp vanilla extract
2 scoops Noway unflavoured protein powder
1/2 tbsp erythritol, optional
1 1/2 cup coconut cream
1/2 cup water
Strawberry compote ingredients:
1 cup frozen strawberries
2 tbsp Nature’s Hollow strawberry jam
1/4 cup water
Toppings:
Natural Greek yoghurt
Sunflower seeds
Blueberries
Hemp hearts
Method:
- Mix all chia pudding ingredients together in a medium mixing bowl until we’ll combined. Cover and transfer to the refrigerator for 4-6 hrs or preferably overnight.
- Meanwhile add all compote ingredients to a small pot and heat over a medium heat for 3-4 minutes, stirring continuously. Bring to the boil.
- Lightly mash the fruit as you stir to thicken the compote slightly. If you’d prefer a thicker compote continue to cook to reduce the liquid further or leave it with a little more liquid, up to you!
- Refrigerate until cold.
- To serve the chia pudding: scoop out 1/2 cup of the chia pudding and gently fold through 1/4 cup Greek yoghurt, top with strawberry compote and toppings of choice.
